A one-pot hug on a cold evening - browned sausage, creamy white beans and sweet carrots simmered in a rich tomato broth until everything melts together. Even better the next day, and it practically cooks itself.
Ingredientsfor 4 portions
- 480 g Cannellini Beans, Canned and Drained, drained
- 400 g Pork Sausages, Raw
- 400 g Tomatoes, Canned, Drained
- 120 g Yellow Onion
- 120 g Carrots
- 15 g Garlic
- 20 g Olive Oil
Steps
- Warm the olive oil in a large pot and brown the sausages on all sides over medium-high heat for 4-5 minutes. Lift them out and slice into thick coins.
- In the same pot, soften the diced onion and carrot for 5 minutes until glossy, scraping up the browned bits - that fond is flavour.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the tomatoes and a splash of water, then return the sliced sausage. Bring to a gentle simmer.
- Add the drained beans and simmer uncovered for 15-20 minutes, stirring now and then, until the broth thickens and the flavours meld.
- Season with salt and pepper, finish with chopped parsley, and serve with crusty bread to mop the bowl.
