Proof that a great dinner can come entirely from the pantry - canned tuna and tomatoes simmered with garlic into a savory sauce that clings to every strand of spaghetti. On the table in twenty minutes, no shopping trip required.
Ingredientsfor 4 portions
- 320 g Spaghetti
- 160 g Canned Tuna, Drained, drained
- 400 g Tomatoes, Canned, Drained
- 100 g Yellow Onion
- 15 g Garlic
- 25 g Olive Oil
Steps
- Bring a large pot of salted water to the boil and cook the spaghetti until al dente, following the packet time. Save a mug of pasta water before draining.
- While the pasta cooks, warm the olive oil in a wide pan and soften the diced onion over medium heat for 3-4 minutes until translucent.
- Add the garlic and cook for 30 seconds until fragrant, then stir in the tomatoes. Simmer for 5-6 minutes until thickened and jammy.
- Fold in the drained tuna, breaking it into flakes, and warm through for 1-2 minutes - don't overcook it or it dries out.
- Toss the drained spaghetti into the sauce with a splash of the reserved pasta water, tossing until every strand is glossy and coated.
- Season with salt, pepper and a drizzle of olive oil, and serve at once.
