Sticky, glossy, and quietly impressive - salmon fillets caramelized in a simple honey-soy glaze over a bed of fluffy rice. Five minutes of prep and one hot pan stand between you and a takeaway-beating dinner.
Ingredientsfor 4 portions
- 600 g Salmon Fillets, Raw
- 300 g Jasmine White Rice
- 40 g Honey
- 45 ml Soy Sauce
- 10 g Garlic
- 30 g Spring Onions
Steps
- Rinse the rice until the water runs clear, then cook it in salted water or a rice cooker while you prepare the salmon.
- Stir together the honey, soy sauce and grated garlic in a small bowl to make the glaze.
- Pat the salmon fillets dry and season lightly. Sear them skin-side down in a hot non-stick pan for 3-4 minutes until the skin is crisp.
- Flip the fillets and cook for another 2 minutes, then pour in the glaze. Spoon it over the fish as it bubbles and thickens into a sticky lacquer, about 2 minutes.
- Fluff the rice and divide between plates. Top with the salmon and drizzle over the pan glaze.
- Scatter with sliced spring onions and serve immediately, while the glaze is still glossy.
