The burger worth firing up the pan for: craggy, lacy-edged beef patties with a deep seared crust, molten cheddar, sweet jammy onions and a swipe of tangy sauce in a toasted bun. Fast, filthy and absolutely worth the napkins.
Ingredientsfor 4 portions
- 600 g 85% Lean Ground Beef, Raw
- 4 bun Hamburger Buns by Lidl
- 80 g Cheddar Cheese
- 1 medium Yellow Onion
- 1 tbsp Butter
- 40 g Iceberg Lettuce
- 40 g Kosher Dill Pickles, sliced
- 2 tbsp Mayonnaise
Steps
- Caramelise the onion first: melt the butter in a pan over medium-low heat and cook the thinly sliced onion, stirring now and then, for 12–15 minutes until deep golden and jammy. Set aside.
- Divide the beef into loose balls — don't compact them. Season generously with salt and pepper on the outside only.
- Get a heavy skillet or griddle screaming hot. Place each ball on the dry surface and smash flat hard with a spatula — the thinner the patty, the more crust you get. Cook undisturbed for 2 minutes until a deep brown crust forms.
- Flip, lay cheddar on each patty and cook for 1 more minute until the cheese melts. Toast the split buns in the beef fat until golden.
- Spread the bun bases with mayonnaise, add lettuce and pickles, then the cheesy patty and a tangle of caramelised onion. Crown with the bun top, press gently and serve straight away.
