Everything you love about a caprese, turned into a glossy, forkable pasta salad. Tender orzo tossed with sweet cherry tomatoes, milky mozzarella and torn basil, finished with a dark swirl of balsamic. Picnic-ready and best in high summer.
Ingredientsfor 4 portions
- 280 g Orzo
- 2 cup Cherry Tomatoes, halved
- 200 g Fresh Mozzarella, torn
- 7.5 tbsp Basil, torn
- 2 tbsp Balsamic Vinegar by Vigo
- 2.1 tbsp Olive Oil
- 1 clove Garlic, finely grated
Steps
- Cook the orzo in well-salted boiling water until just al dente, then drain and rinse briefly under cool water to stop the cooking and keep the grains separate.
- Whisk the olive oil with the grated garlic and a pinch of salt and pepper into a quick dressing.
- Toss the cooled orzo with the dressing, halved cherry tomatoes and torn mozzarella until everything is glossy.
- Fold through most of the basil, then taste and adjust the seasoning.
- Just before serving, scatter the remaining basil and drizzle generously with balsamic for that sweet-sharp finish.
