Faster than delivery and twice as fresh. Golden tofu glazed in sticky homemade teriyaki, tumbled with crisp broccoli and peppers over fluffy rice and a scatter of sesame. Proof that a meat-free weeknight can be the most exciting plate on the table.
Ingredientsfor 4 portions
- 1.9 cup Tofu, firm, cubed
- 4 tbsp Soy Sauce
- 1.9 tbsp Honey
- 3 clove Garlic, minced
- 2.5 tbsp Ginger, grated
- 3.3 cup Broccoli, florets
- 2 medium Bell Peppers, sliced
- 1.7 cup Jasmine White Rice
- 1.7 tbsp Sesame Seeds
- 1.1 tbsp Olive Oil
Steps
- Cook the rice while you prep so everything lands together; stir-fries move fast once the wok is hot.
- Press the tofu dry, cube it, and stir together the soy, honey, garlic and ginger into a quick teriyaki glaze.
- Sear the tofu in the hot oil, turning, for 6–8 minutes until golden and crisp on all sides, then lift out.
- Stir-fry the broccoli and peppers over high heat for 3–4 minutes until bright and just tender with a little char.
- Return the tofu, pour in the teriyaki and toss for 1–2 minutes until sticky and glossy. Serve over rice with a shower of sesame seeds.
