Effortless elegance, no oven required. Pillowy whipped mascarpone spooned under glossy macerated strawberries with their own ruby syrup, finished with toasted almonds. It looks like you fussed; it took ten minutes. Summer's prettiest dessert.
Ingredientsfor 4 portions
- 7.9 tbsp Mascarpone Cheese
- 2.7 cup Strawberries, hulled, quartered
- 1.4 tbsp Honey
- 1 tsp Vanilla Extract
- 30 g Almonds, toasted, slivered
Steps
- Toss the strawberries with half the honey and let them sit for 15–20 minutes until they soften and release a glossy ruby syrup.
- Whip the mascarpone with the remaining honey and the vanilla until smooth, light and just holding soft peaks — stop before it stiffens.
- Toast the almond slivers in a dry pan for 2–3 minutes until golden and fragrant; cool.
- Spoon the whipped mascarpone into glasses or bowls and top with the macerated strawberries and all their syrup.
- Finish with a scatter of toasted almonds for crunch and serve straight away.
