Sweet summer peaches caramelised over the grill against salty, squeaky halloumi, finished with a smoky-honey glaze and a whisper of thyme. The five-minute starter that makes a barbecue feel intentional.
Ingredientsfor 4 portions
- 250 g Halloumi Cheese by Mid East, cubed
- 400 g Peach, firm, cut into wedges
- 20 g Olive Oil
- 30 g Honey
- 4 g Smoked Paprika
- 5 g Thyme, leaves picked
Steps
- Heat a grill or griddle pan to high. Cut the halloumi into bite-size cubes and the peaches into thick wedges so they hold their shape over the heat.
- Whisk the olive oil, honey and smoked paprika into a loose glaze.
- Thread the halloumi and peaches alternately onto skewers, then brush all over with half the glaze.
- Grill for 2–3 minutes per side, turning once, until the halloumi is golden-striped and the peaches are soft and caramelised at the edges.
- Brush with the remaining glaze, scatter with fresh thyme, and serve hot straight off the grill.
