The snack that disappears first: golden cubes of pan-fried halloumi, squeaky and crisp at the edges, doused in a chilli-spiked honey that turns sweet, salty and fiery all at once. Skewer them, grab a napkin, and watch the plate empty.
Ingredientsfor 4 portions
- 250 g Halloumi Cheese by Mid East, cut into 2 cm cubes
- 1 tbsp Olive Oil
- 2 tbsp Honey
- 1 tsp Red Chili Flakes by Morton & Bassett Spices
- 1 Lemon, cut into wedges
Steps
- Pat the halloumi cubes thoroughly dry with kitchen paper — dry cheese is the secret to a crisp, golden crust rather than a steamy one.
- Heat the olive oil in a non-stick pan over medium-high heat. Add the halloumi in a single layer and fry for 4–5 minutes, turning, until each side is deep golden and crisp.
- Warm the honey gently in a small pan with the chilli flakes for about 1 minute, just until loose and fragrant — this is your hot honey.
- Tip the crispy halloumi into a bowl, pour over the hot honey and toss to coat.
- Skewer onto cocktail sticks and serve immediately with lemon wedges to squeeze over — they're best hot, while the outside is still crisp.
