About 30 g of easy carbs a portion from dates and oats, with just enough peanut butter to keep you going — this is the snack for 30–60 minutes before a run, a ride or a gym session, when a full meal would sit too heavy. No oven, 20 minutes, a week's worth in the fridge, and they taste like a chocolate-peanut truffle.
Ingredientsfor 8 portions
- 8 date Medjool Dates, Pitted
- 100 g Rolled Oats
- 5 tbsp Peanut Butter
- 2 tbsp Cocoa Powder
- 1 tbsp Chia Seeds
- 1 tsp Vanilla Extract
- 0.3 tsp Sea Salt
Steps
- If the dates feel firm, cover them with hot water for 10 minutes, then drain well.
- Blitz the oats in a food processor for 20–30 seconds until they look like coarse flour.
- Add the dates, peanut butter, cocoa, chia seeds, vanilla and salt and pulse for 1–2 minutes until the mixture clumps into a ball. It should hold together when pinched; if it's crumbly, add a teaspoon of water.
- With damp hands, roll the mixture into 16 bite-sized balls.
- Chill for at least 30 minutes to firm up. They keep for a week in a sealed box in the fridge — two bites make one portion.
